Here is a Matlab script for converting voxel-based atlases to mesh-based forms. Here is an
example of the INIA19 Primate Brain
atlas converted using this script:

There are a lot of options you can tune that influence whether the resulting mesh is fine or coarse. The defaults work for most cases.
